Expert has over 30 years of experience developing consumer food products, quality and food safety systems. He has a Ph.D. in Food Science and Technology from the University of Nebraska. Following this, he led the Quality Assurance and Product Development team for a major bakery product manufacturing group. Among his accomplishments was the utilization of statistical process control which resulted in cost savings of over $1.5MM/year. Expert has developed over 70 new products, including snack crackers, cookies, natural fruit bars, cakes, pastries and confectionary products. Expert completed BRC Third Party auditor training and is knowledgable in the various GFSI audit schemes. As President of Expert's Firm, Expert was instrumental in the development of natural enzyme systems to replace potassium bromate in bakery products and create extended shelf life systems. He has authored many technical bulletins for the American Institute of Baking and American Society of Baking.

Expert's consulting firm has also assisted various commodity marketing boards in building their industrial marketing programs. His expertise resulted in value added multi-functional ingredients created from lower grade commodities which were previously used as animal feeds or plowed under. He has also assisted sales/marketing concerns in locating contract manufacturers for the products. Expert is an expert in FDA regulations, including labeling, nutrition and GMPs. He has served as an expert witness for defendants in cases involving formula ownership issues. All cases were found in favor of Dr. Sander's client. Expert has extensive experience in packaging film barrier properties, extended shelf life, modified atmosphere packaging and packaging odor transfer issues. He is experienced in Organic and Kosher certification procedures.

  • An agricultural marketing board called upon Expert's Firm to help enhance an industrial marketing plan for a portion of their product which was perhaps not of the standard that could be sold at the retail market. Expert's Firm created value added food ingredients which were multi-funtional in properties ranging from a fat replace to flavor enhancer to natural preservative. Soon after, the maligned fruit received a new more modern name: California Dried Plums.
  • A law firm had a food manufacturing client who was being sued for "stealing" formulations. Expert was called in and firmly established that the plantiff's formulations were more similar to those in common cook books that to the defendant's formulations. The Court found in full favor of Expert' client.
  • A manufacturing company called Expert to assist them in locating a manufacturer for natural fruit bar products. The best solution was to manufacture the products internally. Expert assisted his client in setting up the manufacturing line, formulating products, establishing quality and food safety systems.
  • A major Pacific Rim Corporation contacted Expert to assist them in entering the North American market for natural enzyme-based dough conditioners. Expert revised the ingredients to work with North American baking systems. He then conducted focused lab and plant testing. Soon his client established a major sales base in North America.
